Do you ever see something yummy at the grocery store, but you’re not sure what to do with it? That’s how I felt about butter waffle cookies every time I went into Sprouts. If you don’t know what they are, butter waffle cookies look exactly like waffles, but they are mini cookies, maybe 1.5 inches round and nearly flat. They are too cute to be denied.
So I finally bought a box and Baby A and I sat down one morning to play with them. These are our three favorite ways to gussy up butter waffle cookies into easy party treats. We made:
- A version of s’mores
- Frosting bites, dressed up for 4th of July
- Frosting sandwiches, rolled in sprinkles
All super-easy, and all kid-friendly if you need a summer project for bored little ones.
Butter Waffle Cookie S’mores
My first idea was a deconstructed s’more, because any excuse for a s’more, if I’m being honest.
S’mores ingredients
- Butter waffle cookies
- Hershey Kisses
- Mini marshmallows
- White cookie icing (in a tube)
S’mores instructions
1 – Squeeze a dab of cookie icing on the bottom of a Hershey kiss. Place the kiss to one side of the butter waffle cookie.
2 – Squeeze a dab of cookie icing on the bottom of a mini marshmallow. Place the marshmallow next to the butter waffle cookie.
3 – Squeeze a dab of cookie icing on the side of a mini marshmallow. Place the marshmallow next to the first marshmallow.
And that’s it! Couldn’t be a simpler project. This goes really fast and the finished product stores well in an airtight container, so you can make them in advance of your party. The kisses also hold up well in the heat, so they are perfect for a 4th of July party. But I also think they’d be super-cute for a camping party!
Butter Waffle Cookie Frosting Bites
Baby B is enjoying cake and cookie decorating, so I got her a bunch of piping tips, which is what gave me the idea for a kind of open-faced frosting bite.
Frosting bite ingredients & Supplies
- Butter waffle cookies
- White frosting
- Sprinkles (we used patriotic colors and shapes)
- Large star piping tip
- Disposable piping bag
Frosting bite instructions
1 – Fill your piping bag with frosting. Hold the bag straight above the butter waffle cookie and squeeze to create a little frosting pyramid.
2 – Sprinkle on whatever assortment of sprinkles you prefer. We used 4th of July and red, white and blue sprinkles, but you could decorate these for any party theme or holiday.
Butter Waffle Cookie Frosting Sandwiches
We tried these first with vanilla ice cream, which was delicious, but it melted so fast that we substituted the frosting for ice cream and they were just as good.
Frosting Sandwich ingredients
- Butter waffle cookies
- White frosting
- Small cookie dough scoop
- Sprinkles
Frosting Sandwich Instructions
1 – Scoop white frosting with your small cookie dough scoop, keeping the top edge flat.
2 – Release the frosting onto the butter waffle cookie.
3 – Place another butter waffle cookie onto the frosting, and lightly press down until the frosting reaches the edges of the two cookies.
4 – Roll the frosting edge in sprinkles.
Easy peasy. This one is close to the frosting bites idea, but you get more frosting and more cookie and more sprinkles, so what’s not to love?!
