Cloud Popcorn

Cloud popcorn is a lot like Rice Krispies Treats, but even easier to make and not as sticky.

Equipment

  • 5 quart non-stick pot
  • Silicone spatula

Ingredients

  • 1 bag popcorn of your choice
  • 1/4 cup butter
  • 1 cup mini marshmallows
  • 1/2 cup vanilla yogurt chips
  • 1/2 cup shredded coconut
  • 1 cup vanilla merginues

Instructions

  • Pop popcorn. Discard the unpopped kernels.
  • In a 5-quart non-stick pot, melt 1/4 cup butter on low heat.
  • Once butter is melted, add half the marshmallows and half the yogurt chips. Gently stir until the marshmallows are half-melted. (You still want to be able to see a marshmallow shape, but you need them a little melted so they are sticky.)
  • Gently fold in popcorn.
  • Transfer about 1/3 of the popcorn to your serving dish.
  • Layer in some marshmallows, yogurt chips, coconut and meringues.
  • Repeat the layering two more times, topping with marshmallows, yogurt chips, coconut and meringues.

Notes

The butter and partially melted marshmallows help all the ingredients gently stick together. It's easy to pull apart, but not dense and sticky like a popcorn ball or Rice Krispies Treat.
